Cooking with Klaus – Roasted Potatoes!


Ingredients:

• One hand full of potatoes per person
• One small onion per person
• Salt
• Ground white pepper
• Margarine

First of all, many Americans know this as home fries but we use much less fat for these.
We roast the potatoes in a pan and don’t fry them in a deep fat fryer!
That’s why I am talking about roasted potatoes!

Preparation:

Boil the potatoes the day before, peel them and put them in the fridge overnight. This will give a much better result than using fresh boiled potatoes, which would end up in a mess, looking like roasted mash potatoes and not like typical German roasted potatoes!

Take the potatoes out of the fridge and slice them. Peel the onions and cut them in half rings. Heat a non-sticking pan with one spoon of margarine. Add the potatoes and let them roast for 3 to 4 minutes at high heat before you stir them for the fi rst time. Add salt and ground white pepper and let it roast on medium heat for 3 to 4 minutes.

Then add the onions, let them roast and maybe add some more spice, depends on your own taste. Also you may add some more margarine, depends on the potatoes and how much they soak up the margarine. When all of the potatoes have a nice brownish color and they smell awesome, they are ready to enjoy!

They are a perfect side dish for many meals.
