Cooking with Klaus – Vegetable Rice with Salmon Filet

• ¾ of a pound Basmati rice raw
• 1 cup frozen peas
• 8 sprigs of dill
• 4 tablespoons of lemon/lime juice
• 8 tablespoons olive oil
• 2 ripe avocados
• Salt, ground white pepper and sugar to taste
• 4 1/3 pound salmon filets


Boil the rice in salt water until it is done but not too soft. When there is about 1 minute left of cooking time on the rice, add the peas.  Chop the dill. Cut the avocado in half and remove  stone.  Peel,  and  cut  avocado  in  ½” pieces.  In a bowl, place rice, ½ of the lime juice, ½ of olive oil. Season with salt, pepper, sugar and dill. Gently fold in the avocado. Prepare  salmon  with  remaining  lime  juice, pepper and salt. Heat a pan with the rest of the olive oil.  Roast on medium heat on both sides for 2-3 minutes.Make  a  nice  bed  on  a  plate  from  the  avo-cado/rice  mixture.  Top  with  the  salmon  filet. Garnish with dill.
