Ingredients (for 4 people)
• 2 pounds medium sized potatoes (use hard boiling ‘vorwiegend festkochende kartoffeln’)
• 1 tablespoon fennel
• 1 tablespoon salt
Boil potatoes with fennel and salt. Peel the potatoes and put in refrigerator the day before.
• 2 medium onions sliced
• 2 red bell peppers sliced
• 1½ cup cabanossi meat sticks, thinly sliced
• 10-12 tablespoons oil
• ½ pound pimientos, whole
• 1 tablespoon spicy paprika
Put half of the oil in a pan. Add cabanossi and let roast for 1-2 minutes. Slice potatoes and add to pan. Roast them for 1-2 minutes. Add salt and pepper to taste. Put these in oven to keep warm. Add the rest of the oil to the pan. Put the onions, bell pepper pimientos in pan and roast until they are a nicely brown color. Add potatoes and cabanossi. Mix all ingredients as you add the spicy Paprika. This meal can be served straight from the pan to the table if you like. A nice side dish of tomato salad and yogurt dressing will make the meal complete!
