Cooking with Klaus – Pälzer dicke Bohnesupp (palatinate bean stew)


Ingredients for 4 persons

3-4 cups of dried white beans
6-8 cups of vegetable broth
4 large potatoes
3 carrots
1 large onion
1 parsley root
½ stalk leak
¼ German celery
½ cup chopped parsley
4 Pfälzer smoked sausages (mettwuerstchen on the economy)
1 pound bacon, diced into ½ cubes
1 tablespoon margarine
Salt to taste
Pepper to taste
Marjoram to taste

Preparation

Soak the beans in water overnight. Make sure they are more than covered. Rinse beans the next day and strain. Place the beans, bacon and margarine in a pot and let simmer. Add 5 cups vegetable
broth and let simmer for 30 minutes.

Peel carrots, potatoes, and parsley root and dice into ½ inch cubes. Wash and cube celery and onions. Add potatoes, carrots, celery, onions and parsley root to bean, bacon and vegetable broth. Let simmer for 10 minutes.

Add the leek and let it simmer for another 5-10 minutes. Now add the smoked sausages. Let it simmer with no lid for 8-10 minutes. Then remove sausages and cut into bite size pieces.
Add seasoning to stew to match your taste.

Put in a nice bowl with chopped parsley as a garnish and perhaps a nice dark rye bread. What a lovely dish for a cold evening!
